Looking to vacation on a budget?

If increases in gas prices and home heating costs have you wondering if you can afford to

My husband and I are interested in going away during Christmas 2008. We have done a lot of traveling - Europe, India, Thailand, Australia, Singapore, Russia, etc. We’ve never traveled with a group or stayed at a resort. We’ve always gone off on our own, offering hiring a car, and doing what we like.
We now have an 18-month old baby, who’ll be just over 2 at Christmas. Obviously we can’t travel as we once did.
We’ve never been to Latin America or the Caribbean and we’ve never been into the idea of an all-inclusive resort vacation but we’ll have to find some sort of compromise with the baby.
We’re interested in Costa Rica but will happily consider other places.
We’d like to go for a week but can stay for up to 10 days. We’re thinking that if we travel on Christmas Day and return on New Year’s Day or thereabouts we might be able to get some better deals. I’m trying to do this on a budget, well, as much as I can.
I’d be very grateful for your help.
